Abstract. Ottoman documentation from the 15th – 16th centuries contains interesting and detailed information about agricultural production and animal husbandry in the Bulgarian lands during the early Ottoman rule. A large part of the population in the Ottoman Empire lived in the villages and engaged in agriculture and animal husbandry. The Ottoman Empire was therefore primarily an agricultural state. Livestock breeding was part of agricultural production. What did agricultural production include during this period? It is noteworthy that there was production of various grain products, fruits and vegetables, and some legumes. The cultivation of fruit trees and viticulture were important branches of agriculture in Bulgarian lands during the Ottoman rule in the 15th-16th centuries. As far as animal husbandry is concerned, here too some important branches attract the attention of the researcher. The breeding of pigs, sheep, fowls and cattle are the common branches of animal husbandry. The presence of the names of occupations in the rural environment in their Bulgarian version such as свинар, овчар, говедар testify to the importance of these industries in the Bulgarian lands in the 15th – 16th centuries.
The aim of this study is to trace the agricultural production as well as animal husbandry in the Bulgarian lands, as reflected in the Ottoman documentation of the 15th – 16th century. An attempt will be made to establish the continuity and changes in agricultural production from the 15th to the 16th century.
